34.  The smell of yams baking in the oven (OMG, they are making me hungry)
35.  My cat who is finally starting to cuddle with me — even if it’s only for a couple minutes at a time
36.  Friends far and near who all hold a special place in my heart.
37.  My faith and the salvation and hope it brings me each and every day.
38.  My business and the satisfaction I get from being successful and the knowledge that it provides for all my needs
39.  My family — that is waiting to spend the day with me
40.  This country — and the fact that I live in a place that allows me to freedom to openly share all that I’m thankful for even when I may sound sarcastic or silly talking about it.

31.  Books — especially my Kindle books.  And how alert I am after reading
32.  Weekends spent with family.
33.  Caramel Corn — even if I haven’t eaten any in a long time.  Actually — I’ll broaden that to any kind of popcorn.  :)

22.  Movies and friends to spend an evening with enjoying dinner a a movie.
23.  Sneak Out Saturday
24.  Lights that work when I leave the office so I don’t have to worry that a cougar is going to try to eat me.  (I know weird thought but there are cougars here and it’s REALLY dark if the light isn’t on.)
25.  Fridays.  Especially productive Fridays.
26.  Mixed Berry Pie with ice cream on top.  (Yes, I had pie for lunch, got a problem with that?)

15.  I’m thankful for snow tires and that they are on my car now so the snow can really fly.
16.  I’m thankful for my dad and the time he’s been able to spend up here the last few weeks.
17.  I’m thankful for my brother who I get to work with every day and who will be an annoying brother one minute but the next do something to make me know he really is a great brother.
18.  I’m thankful for my sister, Tami, and the time we get to spend together now that she’s living here.  I’m thankful for the time we got to spend together living in the same house
19.  I’m thankful for my sister, Teri, and knowing that she’s always there for a “hey” or a “how’s it going” or a listening ear when I need it.
20.  I’m thankful for my mom who balances so much in her life, with taking care of my dad and working full-time and being a great mom, sister, and daughter.
21.  I’m thankful for evenings spent with family and watching the joy in my niece and nephew’s eyes when they enjoy a special evening with us watching Disney on Ice.

10.  Snow.  No, I’m not prepared for it. In a few months I’ll be ready for it to end.  But, tonight it’s just so beautiful looking out the window watching it fall.
11.  Weekends

13.  A new bank and the nice people who work there.
14.  The new recipe I tried tonight (which I’ll share because it was that good).

Peas and Pasta

Ingredients:

1 onion, diced
1 T olive oil
10 oz bag frozen peas
½ t Italian seasonings, salt/pepper
16 oz heavy cream
4 oz Parmesan cheese
12 oz whole wheat penne pasta

Procedure:

In large skillet, heat onion in oil and cook until very tender and slightly carmelized. Add peas, italian seasons, salt & pepper to taste. Cook for several more minutes. Slowly add heavy cream and parmesan cheese, stirring constantly until cream begins to thicken. Remove from heat. Cook pasta according to pkg directions and serve with cream sauce.

So, that’s the official recipe. However, I left out the Italian seasonings because I HATE oregano and didn’t feel like adding anything else.  I also had a 16 ounce bag of peas and I used most of it, next time I’ll probably use all of it.  Also, next time I’ll add sliced mushrooms to it.  Other than that, it was DELICIOUS.
