10.  Snow.  No, I’m not prepared for it. In a few months I’ll be ready for it to end.  But, tonight it’s just so beautiful looking out the window watching it fall.

14.  The new recipe I tried tonight (which I’ll share because it was that good).

Peas and Pasta

Ingredients:

1 onion, diced
1 T olive oil
10 oz bag frozen peas
½ t Italian seasonings, salt/pepper
16 oz heavy cream
4 oz Parmesan cheese
12 oz whole wheat penne pasta

Procedure:

In large skillet, heat onion in oil and cook until very tender and slightly carmelized. Add peas, italian seasons, salt & pepper to taste. Cook for several more minutes. Slowly add heavy cream and parmesan cheese, stirring constantly until cream begins to thicken. Remove from heat. Cook pasta according to pkg directions and serve with cream sauce.

So, that’s the official recipe. However, I left out the Italian seasonings because I HATE oregano and didn’t feel like adding anything else.  I also had a 16 ounce bag of peas and I used most of it, next time I’ll probably use all of it.  Also, next time I’ll add sliced mushrooms to it.  Other than that, it was DELICIOUS.

So much for two a day for the month of November. LOL  Things have been crazy.  But, I’ll pick up where I left off.

3. I’m thankful for coffee mornings.  Which pretty much translates to…
4.  I’m thankful for my assistant who picks up coffee for me on mornings that she’s working.
5.  I’m thankful that I have many good memories of time with my grandma.
6.  I’m thankful for my job and the fact that even when I’m so busy that I feel like I’m going crazy it really means that I’m successful at what I do and able to support myself.

So, the last two years I’ve done this.  Well, I’m starting early this time.  If I do two a day between now and Thanksgiving I’ll have 50.  So, I might do more than 40.  We’ll see.

1.  I am thankful for relaxing weekends that rejuvenate me and prepare me to face Monday morning again

2. I am thankful for sleep and that even though I don’t like time change, once a year it means I feel like I’ve actually caught up on my sleep.
