Yes, that is a word. LOL
So, I cooked tonight…that’s not huge news…I cook a lot. Sometimes what I cook is exciting…sometimes it’s sustenance. Tonight it was DELICIOUS.
So, I made Thai Peanut Stir-Fry (or whatever you feel like calling it)
Noodles (I used Angel Hair pasta because it’s all I had LOL)
Peanut Butter (Natural — don’t use that chemical crap they try to pass off for Peanut Butter)
Low Sodium Soy Sauce
Water
Chili Sauce
Chicken
Vegetables (I used brocoli and carrots because it’s all I had — yeah, I know I just went to the market but I forgot fresh veges - duh)
Garlic and Olive Oil (and if you call it EVOO I’m no longer your friend)
Cook the pasta — I can’t tell you how because I don’t know what kind you’re using
Cut the chicken into bite-sized pieces and cook it in the oil and garlic. Add your veges and cook them too.
To make the sauce use about equal parts peanut butter, water, and soy sauce. You have to taste it to see if it tastes right. Then add chili sauce to the spiciness you like (I made my a tad too spicy tonight but it was still so stinking yummy).
Mix some sauce over the chicken vege mixture. Then toss the Pasta with some sauce. Then mix them all together and eat. It’s YUMMY.
